Do creationists deny all evolution, or just evolution of man?

I was thinking about the H1N1 virus and how it mutates and evolves new features making it a perennial problem for doctors and scientists. Do creationists deny this evolution as well, or just the evolution of more complex life forms? My understanding of the creationist theory is that god created all life forms and the universe as it is today.
